Mother’s Days are kind of bitter-sweet because, to be honest, growing up, my mom and I did not enjoy a close relationship. Now that we are closer, she doesn’t celebrate any holidays, so I am not free to express gratitude to her on this day because it would offend her. I do have an awesome step-mom, but Mother’s Day is the last Sunday of May in the Dominican Republic. My girls make up for that big time, though because they celebrate my motherhood and always make me feel so special, cherished, and appreciated. They seriously light up my world!
My girls wore my dresses to church (yes, they fit great!) and it was a treat with a very musical program. The men sang, the children’s choir sang, and we had youth talk about what their moms mean to them. I was tearing up, of course, but gladly, my eyes were not too swollen for a selfie (look at those smiles!).
We got home at about 2 and a few minutes after that, the Mother’s Day extravaganza began. The girls made up a song based on “The 12 Days of Christmas”, called The 12 Days of Motherhood, and they performed it as they presented their 12 gifts to me.
It was such a fun time and I loved the recycled and homemade art and crafts. They also presented a “Certificate of Completion and Excellence” in motherhood, which had a spot for each of my loved ones to sign (well, except for my mom lol). I felt so much JOY, so no more pictures of me after all the crying ~ he he.
I was pleasantly surprised to find out that my family made a raw vegan pecan pie for me. Pecan Pie is considered a Thanksgiving treat, but it is my favorite any time of the year. The first birthday we spent together as husband and wife he gave me a set of black knives as a present, and I have been teasing him about it ever since. This pecan pie was so deliciously scrumptious that I told him he has been redeemed of the black knife curse forever. Ha!
I only have an AFTER picture because I didn’t make this, I’ve never made it, and it was a surprise. I did ask them for the recipe and I’m sharing it with you.
Raw Vegan Pecan Pie Recipe
Pie Crust
- ¾ Cup Raw Pecans
- ¾ Cup Raw Walnuts
- 1 teaspoon Salt
- ¼ Cup Shredded Coconut
- 1 Cup Dates (packed)
- Nutmeg – Ground
- Cinnamon – Ground
- Cardamom – Ground
Pie Filling
- 1 ¼ Cup Dates, tightly packed, soaked in warm water for 5 hours
- ½ Cup Raw Pecans
- ¾ Cup Raw Pecans
- ¼ Cup Raisins
- ¼ Cup Melted Coconut Oil
- 1 teaspoon Salt
- Cinnamon to taste
- Cardamom to taste
- Nutmeg to taste
- 1/3 Cup Brown Sugar
Pie Preparation
Put all the ingredients for the crust in the blender, except the dates. Grind roughly. Add the dates and blend thoroughly until it sticks together and keeps its shape when you squeeze it. Press crust evenly on bottom and sides of a pie pan.
Pie Filling ~ Drain the dates, save the soak liquid. Add dates and filling ingredients to blender and add about ¼ cup of the soak liquid. Blend until smooth and uniform, scraping the sides a few times between blends to make sure everything gets processed.
Pour or scoop the filling into the crust, smooth with a spatula, decorate the top with ¾ cup of Pecans. Chill until firm and serve.
