A week ago today, I did a mini presentation to the ladies at church about why I became vegan and my “conversion journey.” I brought some of my Dominican Vegan Spaghetti for sampling… vegan food for thought, if you will.
The theme of the activity was to have the courage to try something new, so I did something I’d never done before: I wrote a recipe. I’ve made a dozen recipes up, but I don’t measure anything, and I don’t write it down. Little rebel... or BIG rebel in a tiny body (you decide the level of feistiness).
But I did it. And here is the first one, as I love to share the love of my creation, and the yumminess of their taste:
Ingredients
- 1 box Spaghetti noodles (Quinoa noodles are best!)
- 1 jar of organic, natural, Spaghetti sauce – Simple Truth Organic Pasta Sauce is USDA organic.
- 4 medium broccoli florets, finely chopped
- 3 teaspoons pre-made seasoning (you can use Sofrito brand or blend your own with onions, garlic, cilantro, and cubanela pepper).
- Assorted chopped bell peppers – ½ cup each (yellow, green, orange, red)
- ½ cup chopped onion
- ¼ cup chopped cilantro
- 6 chopped green olives
- 8 cloves of garlic
- Half teaspoon oregano
- 5 basil leaves
- 1 box 12 oz (340g) Lightlife Smart Ground (original veggie protein crumbles, vegan, zero fat, made with non-GMO soy)
- small pinch of sea salt
- small pinch of pepper
- Vegan parmesan cheese, if desired
Preparation
Start off by heating a large pan about halfway full of water for your noodles. Heat to boiling and put your noodles in, adding some garlic, oregano, basil, and cilantro.
Stir the noodles occasionally to keep them from sticking together. Cook until noodles are at your desired tenderness.
While waiting on your noodles to cook, sauté your vegan ground with the seasoning, all the peppers, olives, onions, garlic, basil, cilantro, salt, pepper, and oregano.
Take your spaghetti sauce and add it into the vegan ground mix until hot.
Place on a simmering heat and add the spaghetti for a few minutes (you can add the mix to the spaghetti, as well).
Sprinkle your broccoli pieces, mix, and let it sit for a few minutes.
Add parmesan cheese, if desired, and ENJOY!
You’re sure going to love this recipe because it is from the bottom of my heart and because it’s tasty and nutritious. The kids will love it and it doesn’t cost an arm and a leg (which was an important factor for me as a single mom trying to make ends meet). The most meaningful aspect of this is that when you eat healthily and treat your body as a temple, I guarantee that you will feel more connected to God, to yourself, and to others, and that you will gain access to wisdom, clarity, and holiness, so you can live a guided life.

I have been searching for this Veggie Protein Crumbles because I saw it from a Christian Cooking Show one time and she was preparing healthy meals for her family and she used this type of crumble. I couldn't find it anywhere, but maybe I'll try in some of the healthy food stores. Hmmmm... I love Quinoa Pasta too. They are good. Thanks for sharing your recipe. Delicious it sounds like.

This is great - to have a vegan spaghetti really nice - maybe opt out for the cheese to be really completely vegan
